Prepare the Ingredients

  • Preheat. Begin by preheating your oven to 375°F (190°C) and lightly greasing a 9x13 baking dish.Prepare your station. Make your dredging station: In a large, shallow bowl, mix together 1 cup of crushed Ritz crackers, ¼ teaspoon each of paprika, onion powder, garlic powder, salt, and ⅛ teaspoon of pepper. In a separate bowl, whisk together 2 large eggs.Pound the chicken. Place 2 pounds of chicken breasts onto a cutting board and cover them with a sheet of plastic cling film. Use a meat mallet to pound each chicken breast into a level thickness so that it can cook evenly, if necessary.

Dredge & Bake

  • Dip the chicken. One at a time, place the chicken breast into the eggs and allow the excess to drip off.Coat. Then, transfer the coated chicken to the bowl with the Ritz mixture. Make sure to thoroughly coat the chicken and then place it into the prepared baking dish.Brush with butter. Repeat with the remaining chicken breasts until they are all in the baking dish. Then, brush all of the chicken pieces with 4 tablespoons of melted butter.Bake. Bake, uncovered, at 375°F (190°C) for 30-35 minutes, or until the chicken is completely cooked through.Serve. Remove from the oven and enjoy while hot.

Serve your butter chicken with a side salad, Instant Pot mashed potatoes, or air fryer French fries! It is super versatile and pairs well with anything! Enjoy!

💭 Angela’s Tips & Recipe Notes

  • The best and most efficient way of ensuring your chicken is properly cooked is by using a meat thermometer. Chicken should have an internal temperature of 165°F (74°C) when cooked. While this recipe calls for chicken breasts, you can easily mix it up by using chicken thighs or legs!Try mixing in ¼ cup of shredded Parmesan, Romano, or Asiago cheese for a tasty twist or even finely crushed bacon bits!

🥡 Storing & Reheating

Keep any leftover chicken stored in the refrigerator in a sealed container for up to 4 days. *These coated chicken breasts store best in a single layer in a shallow storage container.

You can freeze cooked Ritz chicken on a baking sheet in a single layer for a few hours. Once frozen, transfer the chicken to a freezer-safe storage container for up to 3 months.

Reheating Ritz Chicken

Your chicken can easily be heated in the microwave. However, they are best when warmed up in the oven. If frozen, you can reheat your chicken straight out of the freezer by baking it in the oven at 350°F (175°C).
