Since your prime rib is already cooked, these burritos come together very quickly for a better-than-restaurant quality dinner at home!! Plus, all of the fantastic flavor from your prime rib seasoning is already in place on the beef (you used my dry rub, right?!). Combine that great roasted prime rib flavor with my wonderful pico de gallo and guacamole. You’re sure to love these stuffed burritos, grilled or not, as much as my family does!!

These tasty Leftover Prime Rib Burritos are everything you love about fantastically flavorful burritos with the addition of tender pieces of prime rib! InstructionsLeftover Prime Rib BurritosPreheat your oven to 250 degrees F (121 degrees C).Slice your leftover prime rib portion into thin strips or bite-sized pieces. Place the prime rib portion into a sheet of aluminum foil to make a pouch around the cut beef. For added moisture, you can drizzle a bit of beef broth over the prime rib slices before sealing the aluminum foil pouch.Place your aluminum foil pouch with the prime rib in the preheated oven and warm the leftover pieces for 5-10 minutes. *Depending on how warm you want the beef. If you opt to grill your burrito, the lower warming time should work nicely.Optional - Mix the cooked rice with the juice (and lime zest, if desired) from one lime and the chopped cilantro. Mix and set aside.Heat the drained and rinsed black beans until warmed, either in the microwave or in a skillet. Heat the skillet with a drizzle of olive oil to medium heat, then cook the beans until warm.Heat each tortilla before assembling the burritos.
