InstructionsYou will begin the process by creating your catfish batter in a medium-sized bowl by adding flour, cornmeal, baking powder, spices (cayenne, black pepper, white pepper, garlic powder, and paprika), salt, egg, and beer. Stir the mixture until it is smooth and allow it to sit in the fridge for 1 hour.1 cup all-purpose flour, 1 cup cornmeal, 1 tablespoon salt, 1 tablespoon garlic powder, 1 tablespoon paprika, 1 teaspoon baking powder, 1 teaspoon cayenne pepper, 1 teaspoon ground black pepper, 1 teaspoon ground white pepper, 1 egg, 6 ounces beerWhile your batter is in the refrigerator, you can prep your 2 pounds of catfish by patting each fillet with a paper towel to ensure they are not too moist (*see note).
