Beets - 4 medium-sized beets cut into bite-sized pieces. Olive Oil - 2 tablespoons of extra virgin olive oil. Kosher Salt - ½ a teaspoon.Butter (optional) - 1 tablespoon for tossing the beets at the end of cooking.
