Lemon Cake Mix - 15 ounces of any brand of lemon cake mix (I used Duncan Hines).Diet 7Up - 20 ounces.Cool Whip - 8 ounces of lite or fat-free Cool Whip. Be sure to see the recipe card below for ingredients, amounts & instructions! 🔪 How To Make Lemon 7Up Cake This recipe is definitely beginner-friendly. All you need is a mixing bowl, silicone spatula, and a 9x13 baking pan! When sliced into 24 slices, each slice is a serving worth 2 weight watchers points.
Preheat. Preheat your oven to 350°F (175°C) and spray a 9x13 baking pan with non-stick cooking spray.Mix. Empty a 15-ounce box of cake mix into a large mixing bowl. Pour in 20 ounces of Diet 7Up and mix gently until thoroughly combined. *Do NOT follow the instructions on the back of the box of cake mix.Bake. Pour the cake batter into your baking pan. Place your cake on the middle of the center rack in your oven and bake for 30-35 minutes.Cool. Remove your cake from the oven and set it aside to cool completely. Once cooled, top it with 8 ounces of Cool Whip. Spread it into an even layer across the top of the cake like frosting. Slice and serve. Slice your cake into 24 even slices. Top with zested lemon, fresh fruit, or bits of crumbled cake if desired, and serve. Strawberries, raspberries, pineapple, or mandarin oranges would all be incredible on top of this fluffy, lemon cake. Even without any toppings, it is pretty darn good.
